Date & Tahini Energy Balls

There is nothing better than one of these balls after a good workout and a cold water dip!

They take no time to make and you don’t need to pay too much attention to quantities - you can’t really go wrong with them.

The quantities below will make approximately 10-15 balls.


Ingredients

  • 2 cups of dates (medjool if possible, but any soft dates will work)

  • 2 good tablespoons of tahini

  • A pinch of salt

  • 100g of good quality dark chocolate

  • 1/2 teaspoon coconut oil


Whizz the dates together with the tahini and a pinch of good quality sea salt in a food processor, to form a paste.

Roll the mixture into balls and place them on a tray covered with baking parchment. Pop the balls into the freezer whilst you melt the chocolate.

Melt the chocolate in a Bain Marie with another small pinch of salt. I sometimes add 1/2 a teaspoon of coconut oil, although this is not essential.

Once the chocolate is melted, take the balls out of the freezer and roll them in the chocolate before placing them back onto the tray. I sometimes decorate by drizzling any leftover melted chocolate over the top, or sprinkling on a few cacao nibs.

Keep the energy balls in the fridge until you are ready to eat them.
